Egg Muffins; Eggs on the go

I love 2 fried eggs cooked in ghee and sprinkled with ghee for breakfast. I serve it with some sauerkraut or kimchee for a yummy balanced breakfast. Recently I have wanted more and fancied trying egg muffins or crustless quiche as they are also known. I love these recipes for eggs on the go. They can be made and then frozen or are egg-cellent in lunch boxes (sorry I couldn’t resist!)

Banana, Date and Sesame Muffins

It was the last day of term party at my daughter’s kindergarten this week. Sharing food at school is not allowed for many reasons but at the end of term they are able to bring food for sharing.

There is a no nut rule in the school and so I wanted to make sure my daughter was able to have food she could make herself, can eat herself (she has sensitivities to wheat, some dairy and has a strong reaction to refined sugar) and also be excited to share with her friends.

We looked through all my recipe books and we decided on a banana and date bread recipe. I have adapted and added nutrition to it, so that we are all happy! They tasted great too! We are gluten free in the house so I used Tapioca, Oat and Coconut flour, I then used  kefir to keep them moist and light. Since I could not use almond flour (no nuts) I added black sesame seeds which contain more antioxidants. 


We also made Cinnamon Salty Sweet Popcorn for her to take too. I sent a whole box and none of them came back so that seems like a success!!


Light and moist, the dates helped to add texture and sweetness to the muffins. The mixture was wet without being sloppy and by keeping the muffins small by using this pan (from Amazon but in Hong Kong I bought it on Shanghai St) the cooking time was only 10 mins!  About the right amount of time to keep my daughter engaged with the task!

Banana, Date and Sesame Muffins
A delicious gluten and nut free muffin. Sweetened with dates and coconut sugar, these muffins are a very satisfying treat for all ages (1 and up as it contains eggs)

  1. 150g oat flour
  2. 50g tapioca flour
  3. 25g coconut flour
  4. 10 dates chopped into small pieces
  5. 1 tbs kefir (milk or water)
  6. 175g butter/ghee
  7. 50g coconut sugar
  8. 3 eggs
  9. 2 medium ripe banana's
  10. 1/2 tsp baking powder
  11. 1/2 tsp ground cinnamon
  12. 2 tbs sesame seeds
  1. Mash banana in a bowl
  2. Cream butter and sugar with a beater
  3. Add banana and eggs
  4. Add Vanilla at this time too
  5. Sift flour, cinnamon and baking powder in
  6. Beat till smooth then stir in dates.
  7. Add to muffin pan and cook at 180 degree for 10-15 mins- check at regular intervals
  8. Allow to cool
  9. Stone in a glass container in frigdge

I make a batch a muffins a week to try and help fll up my kids. It is important to me that they contain lots of nutrition. I like to make things gluten and dairy free and I go through a lot of eggs so don’t always always have enough. This recipe is very easy to whip up as we always have all the ingredients! 

Banana Mocha Muffin Bites
Yields 30
Gluten, nut, egg and dairy free. Yet still delicious and nutritious

  1. 3 banana's
  2. 2 tbs Kefir (any kind will do- I used Oat Milk Kefir)
  3. 1/2 Cup coconut sugar (optional)
  4. 1 expresso cup of coffee (decaf optional)
  5. Vanilla essence
  6. Hazelnut essence
  7. 1tbs Coconut oil (melted)
  8. 1 cup Buckwheat Flour
  9. 1/2 cup Raw Cacao
  10. 1tps Baking powder (Aluminium Free)
  11. 1tsp fizzy water (Optional)
  1. Heat oven to 200 degrees C.
  2. In a mixer or beat with a wooden spoon the banana's and coconut sugar. Add the other liquid ingredients (except fizzy water) and beat well.
  3. Add the dry ingredients and mix well. Add the splash of fizzy water mix again.
  4. Add to mini muffin pans and bake for 15-20 mins until firm. Allow to cool.

Cacao Powder

Baking Powder (Aluminium free)
