A Seasonal Recipe to Support Gut Health and Immune Function

Late summer into early autumn is a time of transition. Energy can dip, immunity is challenged, and our digestion often reflects the pace of our lives. That’s why this recipe—rooted in seasonal ingredients and supportive of gut and immune health—is a client favourite in my practice.

Why Rhubarb?

Rhubarb is more than a nostalgic treat from Irish gardens. It’s a nutritional powerhouse for your microbiome, rich in prebiotic fibre that helps feed the beneficial bacteria in your gut. A well-supported microbiome influences everything from your immune response to hormone regulation, inflammation, and even how you experience pain.

Here’s what rhubarb brings to the table:

  • Prebiotic fibre – feeds gut flora and supports microbiome diversity

  • Anthocyanins – the red pigments with powerful antioxidant and anti-inflammatory properties

  • Vitamin K – essential for bone strength and blood clotting

  • Calcium – supportive for bone and muscle health, including the smooth muscles of the digestive tract

In traditional Irish plant wisdom, red-stalked plants were often used for building strength and grounding the body—echoing what we now understand about their cellular and systemic support.

This crumble is a therapeutic version of a comfort classic: no refined flours, options to lower the sugar content, and packed with ingredients that help regulate blood sugar, nourish your nervous system, and keep your digestion humming.

Gut-Loving Rhubarb Crumble Recipe

Ingredients:

For the fruit base:

  • 4–5 stalks of rhubarb, chopped into 2-inch pieces

  • 1 apple, peeled and chopped (optional)

  • 3-4 tbsp coconut sugar or maple syrup (adjust to taste) you can also use caster sugar

  • 1 tbsp grated fresh/ 1tsp ground ginger or 1 tsp ground cinnamon (optional) You can also add vanilla

For the topping:

  • 1 cup rolled oats (half blitzed into flour for texture)

  • 1/2 cup ground almonds or chopped walnuts

  • 1–2 tbsp coconut sugar or soft brown sugar

  • 1/4 tsp sea salt

  • 1 tsp cinnamon

  • 2–3 tbsp butter or coconut oil

Method:

  • Preheat oven to 180°C.

  • In a pot, gently stew the rhubarb with sugar, apple (if using), and spices. Do not add water—rhubarb releases its own.

  • In a bowl, mix oats, nuts, sugar, salt, and cinnamon. Add butter or coconut oil and use your fingers to rub it in until crumbly.

  • Layer the fruit and topping in a baking dish.

  • Bake for 25–30 minutes until golden and bubbling.

  • Serve warm with a dollop of Greek yoghurt, a drizzle of raw honey, whipped cream or custard
