My favourite all time ice cream. I am so excited to have replicated it with real, nutrient dense ingredients.
1 cup/ 400g Coconut meat
1/2 cup 200ml Coconut Yoghurt
1tbs Milk/Almond Kefir
1-2 Tbs Coconut oil
1 tbs Mint infused Water
2 drop s mint essence
1 tsp Coconut nectar
1/2 Cup 200g Homemade Chocolate with 2 drops mint essence
Blend together all the ingredients except the homemade chocolate until smooth. This works well with frozen coconut meat. Cut up the chocolate and stir in. Add to ice-cream machine (I use the Kenwood Chef attachment). You can also freeze this in ice lolly molds like these
