I love pork and apples as a combination. I always have apples in the house and all the family love snacking on them. So this is an easy way of making a sauce for all the family (it goes beautifully on a cheese plate, in a salad or as a nice pudding with some coconut cream)
Ingredients;
2 Apples
1tsp Cinnamon
1/2 tsp Rock Salt
1/4 Cup of filtered water
Core and peel (put the peelings in your Stock pot) the apples and cut them into small pieces. add the cinnamon and season with a pinch of the salt. Add 2 tbs of water at a time when necessary.
Cook the apples slowly over a low heat and add water everytime they get dry and sticky.
Cook until soft and starting to go mushy. Lightly mash (or puree however you like the texture- I like it with a little bite still). Season to taste.
This can be made in advance and stored in a jar. Optional extras include using a little lemon juice and/or butter at the end.
