Sage has so many amazing benefits. It has seen to be effective at cooling down the body (especially during hot sweats) and reduce perspiration, it also helps to dry up excess phlegm and diarrhea.

It contains anti-oxidant and anti-inflammatory compounds which helps to protect and heal cells all through the body. This maintains good circulation of blood and flexibility of muscles and blood vessels throughout the body.

Lemons are also amazing for the body. Rich in vitamin C, good for boosting the digestive system and restoring a ph balance to the body. Lemons stimulate the body and they go really well with Sage. Combined with the raw honey and water kefir, this cordial is great for an immune boost, hormone balance, is cooling and effective at helping to reduce any heat or irritability on the skin or in the digestive system.

Lemon Sage Cordial
A great cordial combining Sage, Lemon, Water Kefir and Raw Honey. An immune powerhouse and hormone balancer. Not to be used during pregnancy or breast feeding.

Ingredients
  1. 5-6 Fresh Sage leaves or 1tsp dried organic sage
  2. 3 lemons- juiced
  3. 1tsp raw honey
  4. 1tbsp Water Kefir
Instructions
  1. Add all of the ingredients to a glass jar
  2. Leave out of the fridge for an hour or two then place in the fridge.
  3. Use 1-2 tbs of cordial to sparking water, warm water or filtered water.
  4. Also can be used to flavour water kefir or Kombucha
Notes
  1. Use sparingly. Good to help cool down the body- especially during a hot flush and also used to help balance hormones after breastfeeding.
  2. Gives an immune boost and can help to dry up excess phlegm and soothe sore throats. Also good for dental health especially chewing the sage leaves.

Garlic Butter Prawns with Zucchini Noodles

This recipe is so simple and delicious and only has 5 ingredients! Have you tried vegetable pasta/noodles yet?

I have been enjoying trying to be grain free the last few months. I have not missed pasta and have still enjoyed noodle soups, spaghetti, and other dishes simply swapping pasta with either sweet potato lightly steamed or zucchini raw.

I use this awesome machine to make my pasta (I bought it from here in Hong Kong). I used to use a simple julienne peeler like this one

but I have to say the spiralizer definitely makes a difference. The texture and thickness of the ‘noodles’ feels more similar to the original. I mostly use the julienne peeler for coleslaw like this Kraut Slaw recipe. You can of course just use a simple peeler and have flat, wide noodles!

This recipe I made for my own birthday dinner! I love the combination of butter, lemon, garlic and prawns and it took seconds to throw together. I added a little stock to boost nutrient levels too! Simply season with salt and pepper and you are done!

Serves 2
A deliciously quick and nutritious simple dinner. Grain free and gluten free. To make it dairy free, swap the butter for coconut oil.

Ingredients
  1. 1 Zucchini per person (spiralized)
  2. 500g Prawns (caught responsibly, from clean waters)
  3. 2 cloves of garlic
  4. 10-50g of butter (depends on how much you like butter!) You can replace this with coconut oil
  5. 1-2 tbs stock
  6. Squeeze of lemon
  7. Salt and Pepper
Instructions
  1. Add the butter to the pan
  2. When melted add the garlic
  3. Fry for a min and then add prawns. Toss in the butter and garlic until they turn pink and flesh is no longer translucent.
  4. Add stock to pan and a squeeze of lemon.
  5. Add to raw or lightly steamed zucchini noodles and toss to completely cover in butter.
  6. Season with salt and pepper.
Notes
  1. serve with a glass of bubbles or crisp white wine!

Kefir Whey, Lemon and Garlic Fermentd Green Beans Loula Natural

I joined a challenge to eat a fermented food every day for 30 days (see here). I have been inspired to get fermenting. I made my first sauerkraut and now I wanted to do green beans. I also have a big jar of whey in  my fridge from making Kefir Cheese. The benefit of using Kefir whey is that you also benefit from the many strains of bacteria and yeast combined within Kefir (rather than the 1/2 strains from yoghurt whey)

A fresh tasting, vibrant way to ferment green beans- Great for snacking on adding to salads and sandwiches.

Ingredients
  1. 500g Green beans
  2. 2 tbs Whey (I used kefir whey you can also use water kefir)
  3. 1 1/2 tablespoons of Himalayan Pink salt/ sea salt (I generally use a 1.5% brining method so find out what 1.5% of your beans weight is for your salt weight)
  4. Half a lemon (cut into wedges
  5. 3-4 Cloves of garlic (crushed)
  6. Enough filtered water to fill the jar with the beans in it.
Instructions
  1. Top and tail the ends off the green beans
  2. Place the jar on its side as it is easier to pack the beans in that way
  3. Place the lemon and garlic in around the beans packing it all in
  4. Add the whey and salt and top up with enough water to ensure the tops of the beans are completely covered. Place a lid on and secure so you can give it a shake to disolve the salt.
  5. Loosen the lid so the carbon dioxide does not build up. Leave on the counter for 24-48 hours (it depends on the room temperature and humidity levels of where you are)
  6. Then allow the fermentation to either continue on the side and monitor or you can refridgerate now and allow to continue to ferment slowly in the fridge.
  7. Leave for between 1-2 weeks- keep tasting. Also monitor gas build up and keep opening the jar to release it.
Notes
  1. These are great to snack on straight out of the jar. Retain the salted mixture to ferment the next batch!

Elderberry Cordial or Cough Syrup

Elderberry Cordial and Cough syrup Loula Natural fb Elderberries are amazing for the immune system. See my Nutrient Fact Sheet here. There is already a well known cough syrup that contains them, this one knocks it out of the park! I have used it for months for my family (kids included), to make Kefir, Gummies and as a cordial with sparkling water. Because this is so concentrated, it will last for ages!

A great way of combining the flavours and nutrient properties of many immune boosting nutrients.

Ingredients
  1. 1.5 cup dried elderberries (see here)
  2. 7 cups of water
  3. 2 T fresh or dried ginger root (ginger powder can also work)
  4. 1 tbs cinnamon powder or 1 cinnamon bark stick
  5. 1 tbs cloves or 1/2 tsp clove powder
  6. 4 Star Anise
  7. Juice of one lemon or orange (optional)
  8. 1/2 cup of dried Cherries (optional)
  9. 1tbs fresh tumeric root (optional)
  10. 1/2-1 cup raw honey (sweeten to taste but raw honey also has immune boosting properties)
Instructions
  1. Bring the water and Elderberries to the boil in a non reactive saucepan (ie stainless steel). Allow to simmer for 20 mins. Allow to cool slightly. Strain Elderberries through a muslin bag or strainer, squeezing to extract all the juice.
  2. Throw everything else together (except the honey) into a saucepan. Bring to the boil and allow to simmer until the liquid has reduced to half (about 15 mins). I then let the mixture cool with all the bits still in to try and get every bit of goodness!
  3. When it has cooled (it may still be a little warm) strain out the elderberries and roots and spices. Add the honey to the liquid and stir. Pour into a jar or bottle (you will have about 2 cups of liquid- about a litre).
Notes
  1. Is great mixed with soda water, in water Kefir as a second ferment, in Gummies or on its own off a spoon when necessary.

You can take this daily (1/2 tsp to 1 tsp for kids over 1 and 1 Tbsp for adults) or you can take it when you start to feel run down. Or you can use it to make Kefir or Gummies. You could also add some Vitamin D3/K” like this one to the bottle to really pack a punch (add 10 drops to the liquid to get a small Vitamin D kick when using it.

Whole Lemon-ade

Man was it HOT today. Lemon’s are amazing- just using the juice loses a lot of lemons amazing proerties. Using the whole lemon, pips peel and all you are getting the lemon’s oil, fibre, antioxidants, Vitamin C, A and even calcium. Plus the scent of lemons lifts moods and enhances that cleansed feel.

I made this in my high speed blender as it needs to be able to process the peel, pith, skin and pips.

 

1 Whole Lemon (organic and un-waxed)

3 Cups of Water

Coconut Sugar (optional- to taste)

I used 2 tsp of Cocobono Coconut Ginger sugar (contact me to source some) and 2 tsp of Coconut sugar as I like my lemons tart. Whizz it all up and the use it like a cordial. I added fizzy water and ice to mine and store the rest in the fridge to use. Super refreshing for my kids too!
