I love eggs for breakfast and normally alternate between my Bircher Chia or Grain free Granola and eggs. For me I have to have a good breakfast as it really sets off the day for me. It is also because I always sit down and have it with the kids. 

This morning I wanted something really quick, but fancied something like eggs benedict. Since I had all these ingredients in the fridge it was the simplest and tastiest savoury breakfast that I have had for a long time. Here are ALL of my breakfast options. This is also a equally simple and delicious lunch or dinner!

Eggs and cheese for me are a match made in heaven, I love raw aged cheese and this cheddar hit the spot with the ham and eggs. I have only just ventured into making my own Kale chips (it helps when you have an amazing quality Kale supplier) but I have been addicted to these ones– today I had hot green on my eggs-yum!. I have been snacking on them but also crumbling them into my salads and eggs for a few weeks now! Flax crackers we always have in the house for the kids to snack on- we like these or these  at the moment.

Ingredients
  1. 2 pasture raised, organic eggs
  2. 4 slices of pasture raised organic ham
  3. Handful of Kale Chips and a flax crackers broken up
  4. 10g of raw aged cheddar (grated)
  5. Salt and pepper for seasoning
  6. Ghee for frying the egg
Instructions
  1. I steam fry my eggs in ghee. Add ghee to a hot pan. Add eggs when whites have formed add a tbs of water to the pan and place a lid over the top.
  2. Allow eggs to cook for a couple of minutes then remove lid. Perfect runny yolks without having to flip the eggs.
  3. Place ham on the plate, then eggs on the ham.
  4. Sprinkle on cheese, kale and crackers
  5. salt and pepper to season
Notes
  1. Enjoy. You can substitute the ham for steak, chicken or pulled pork. You can also remove the meat completely and enjoy this vegetarian.

Stress produces toxins, eating, drinking and breathing in our polluted air alone creates products natural and unnatural that the body’s detoxification pathways have to deal with. Here are some ways to help support your body and reduce the toxic load on a daily basis.  Much gentler and easier to do; thereby helping you towards a healthier 2014.

1.Every morning, begin the day with a boost. Try my Homemade Apple Cider Vinegar in my Yummy Wake Up drink with Cinnamon and Raw honey. Otherwise why not try hot water and the juice of a lemon + a pinch of cayenne pepper. These are both cleansing and alkalinizing, and the cayenne boosts metabolism/burns fat. They stimulates gastric juices and wake you up- ready to start the day. Water is absolutely essential to the cleansing process. So cutting down on caffeine and alcohol and increasing water will really help support the body. The Yummy Wake up will give you a great buzz- way better than coffee!

2. Epsom salt baths. They work by helping to draw out toxins &  absorb magnesium which may help you relax and sleep. 2 handfuls of Epsom salts in the bath can have a big effect. Magnesium can also help to relax muscles which may help relieve constipation. Going at least once a day is vital to remove toxins and prevent them from recirculation in the body. Fermented foods also help support healthy elimination.

3. Make sure you are getting liver friendly foods: whole eggs, leafy greens (kale, chard, collards, beet greens, mustard greens, dandelion greens), artichoke, beetroot, carrots, avocados, broccoli, cauliflower, legumes on a daily basis. Milk thistle as a tea or in your smoothie is a wonderful herb to heal, protect and stimulate the liver. Try a green smoothieEven better why not make it your resolution to get fermented products into your life. Not just a support to the body by healing and strengthening the immune system and digestive system, Bacteria plays an essential role in the supporting the liver. They help break down and reduce the impact of chemical substances and harmful toxins from reaching the blood stream and from re-circulating around the body. 4. Exercise will make you sweat. Sweating removes toxins from the body. Most heavy metals are stored in fat reserves- remove the fat cells and remove the toxins. Moving your body (from walking, dancing, running, yoga,) everyday for at least 20 mins will make a big difference see here, here, and here for inspiration! 5. Fibre may also help draw toxins out of the body. Increasing your raw fruit and veg will automatically increase fibre intake as will adding flax seeds, psyillum husk, oats, chia seeds to your daily diet in salads or breakfast. See Chia Porridge and Almond and Flax Crackers

Bath Scrub and soak

Can be used on dry skin standing in the shower without water. Scrub all over your body in a circular motion towards the heart, and then just shower off or- can be thrown straight in the bath for a wonderful soak. You can also use any scent you like. (For a bigger batch just multiply each value)

1 cup Epsom salts, 1cup of sea salt Enough olive and sweet almond oil to bind them (maybe 1/2 cup) Essential oils- I used vanilla, cinnamon, ylang ylang and lavender. (can also use chamomile, Rose, Frankincense, Juniper berry, Marjoram, Clary sage- If you are pregnant please check which scents are safe to use first, best to stick to lavender or scentless) Mix and I store them in ziplock bags I recycle but  glass jars would look nicer in the bathroom- jam jars would work just as well too!!

Banana, Almond and Flax crackers

My daughter’s kindy has a no nut policy for snack time. It makes sense, however suddenly I am lost as to what to give her other than fruit and cut vegies. Normally I will also have a pot of nuts or I make bars for her with nuts and seeds. However I found a recipe for flax crackers and have tweaked it a bit (although for her ones at school I will just make 100g flax half whole half ground). These have the perfect balance of carbohydrate, protein and essential fats. Can be for snacks or spread with nut butter for breakfast. Also go very well with my Lemon, ginger and orange curd.

80g flax seeds(half ground half whole)

20g ground almonds

1 medium (browned or extra ripe) banana.

Mash the banana with a spoon until its creamy with few lumps. Add the flax seeds, almonds and mix. Keep mixing till it completely combines. Let it sit for 20 mins.

Grease a baking sheet with olive oil cooking spray, drop 1 Tsp drops and press flat.

Bake for 15-20 minutes on 300C or until the edges are brown and the tops are hard.
