Coconut and Turmeric Popcorn Chicken

My son is not a fan of meat- AT ALL. It doesn’t bother me too much as he has lots of stock (bone broth) on a daily basis. He also has a broad spectrum of healthy fats over the day. Animal protein is important and if he ate eggs then I would relax, but he doesn’t. If I am not careful he would just eat carbs all day (like most kids) but then I would pay the price with his behaviour (moaning, anger, weepy and destructive!). 

My quest for lunchbox foods also continues- this one really fits the bill too as they are bite size and nice hot or cold. They will be perfect party food, picnic foods and travel snacks. The fact that they are easy to make is also a huge bonus!

There are just 3 steps;

Cut and soak; Soaking the chicken keeps it really moist and tender

Shake; shaking it in coconut flour and almond flour/coconut gives it a good crust

 He loves them and calls them popcorn! I love that they are packed full of goodness and healthy fats! Bonus is my daughter also loves them and asks for them for lunch. Wining all round! You can add a variety of spices to the chicken, personally I like curry powder in mine, it is delicious with the coconut milk. 

Tumeric and Coconut Popcorn Chicken
This is a great chicken recipe, full of healthy fats and packed with flavour. Coconut and turmeric make this grain free, paleo friendly recipe delicious and nutritious.

Ingredients
  1. 250g Chicken thigh meat
  2. 1/2 can of coconut milk
  3. 1-2 tsp Turmeric powder or grated fresh turmeric
  4. salt and pepper
  5. 3tbsp Desiccated coconut/almond flour
  6. 2tbsp Coconut flour
Instructions
  1. Cut chicken meat into small bite size pieces and place in a glass container (with a lid). Pour over coconut milk and add turmeric, salt and pepper. Replace lid and shake. Leave to marinade in the fridge overnight
  2. Put coconut/almond and flour into a ziplock bag. Pour in chicken and shake bag until all the pieces are covered. Pour contents out onto baking sheet and drizzle with olive oil.
  3. Bake at 200 degree C for 20-25 mins until chicken is fully cooked.
  4. Chicken can be frozen at this time if desired. To reheat, thaw completely and heat some ghee/butter in a pan and reheat chicken until hot through.
  5. Chicken can also be fried in butter or olive oil or in an airfryer
Notes
  1. these are great cold or hot. Serve with some fermented ketchup or mayo, sweet potato chips or a big colourful salad.

As my daughter is back to school its all about snacks and lunches for me- coming up with ideas to keep her going and keeping her balanced is another full time job!!

So when I saw a pack of coconut macaroons in the health food shop I was interested in maybe seeing if she liked them- then I saw the price of them! I put them back and decided to make them myself.

I actually made these with my two year old son today they are that easy!!!

Coco Snackaroons
Yields 20
A delicious and nutritious snack for any age and any time of day! Made with real foods and a great amount of healthy fats.

Ingredients
  1. 2 cup shredded coconut
  2. 1 cup of dates
  3. 3 tbsp raw cacao
  4. pinch of salt
  5. vanilla essence
  6. 1tsp Coconut oil (optional)
  7. Optional extras;
  8. Ground almonds
  9. Chia seeds
  10. Sesame seeds/black sesame powder
Instructions
  1. Add all the ingredients to a food processor and blitz until sticky. Use the coconut oil if you need help binding everything together and to add nutrients.
  2. Ball mixture to the size you desire- for kids I do large marble size
  3. Store in the fridge

Coconut Ginger Cookies

Always on the lookout for nut free nutrient dense recipes for school lunches and snacks- I found this recipe. I love the simplicity of the recipe but since my daughter is not a massive coconut fan I wanted to change the flavour without changing the flour.

Adding the ginger gives an amazing spin on such a wonderfully simple recipe.

A delicious spin on a very simple and effective cookie recipe.

Ingredients
  1. 6tbs coconut flour
  2. 5 tbs Butter (cold)
  3. 1 Tbs Honey
  4. 1-2 tsp ground ginger
Instructions
  1. Add all of the ingredients to a mixer
  2. Use on a medium speed to blend all ingredients.
  3. ball up mixture into 16-20 balls
  4. Grease a baking sheet, place balls on the sheet
  5. Press down balls to m2ke cookies
  6. Bake at 200 degrees for 8-10 mins.
Notes
  1. Watch the cookies as they start off browning at the endge.

Choco-Coco Milkshake

OLYMPUS DIGITAL CAMERA I just knocked together the most delicious milkshake for the kids- it was difficult to give away!!!! Its 5pm and I have to get dinner done and with one child almost able to entertain herself (almost 4) I have one under my feet still (15 months). He is constantly looking for food or emptying the cupboards etc. So for a 5 min window I decided to give them a milkshake (read smoothie!!)

Ingredients

1 cup Oat Milk

1 Cup Fresh Coconut Water (or carton)

1/2 Cup Ice

1-2 tbs Coconut Yoghurt (buy it in Hong Kong here)

Handful of flaked Coconut (could use coconut mana or coconut yoghurt)

Handful of Cacao nibs (or tbs of cacao powder or homemade chocolate)

1tbs nut butter (peanut, hazelnut,cashew, almond or my apricot kernal one)

1tbs Gelatin (I like this gelatin for drinks)

few drops of vanilla extract

dash of maple syrup (optional as it was already pretty sweet)

Blitz all of the above in a high speed blender and serve! Kids seal of approval!

Coconut Milk

Coconut Milk Loula Natural fb I love coconut. I love making coconut yoghurt, milk and butter from the meat and drinking the water and making coconut water kefir. The recipes couldn’t be simpler.

The results from making them fresh and from home are so beyond what you can buy in cartons, cans and jars! Mostly however because the natural bacteria are still present in the fresh meat and water and this greatly enhances the health giving properties. I use Young Thai coconuts, they are my favourite tasting ones. They also have a good amount of soft meat and water to make a delicious coconut milk that does not need straining. Have a look at my post to see how to easily open them

There are also several methods of making coconut milk from dried coconut too. In the tropics we have these in abundance of fresh coconuts in the supermarkets and after using the water and meat they are a bargain. Now I just need some ideas on how to use the husks- I hate waste and live on the 27th floor! (update- we now live in a house and I am planning to use them as planters for some seedlings.)

The easiest way to make coconut milk is to use the contents of one coconut (meat and water- topping up with filtered water if necessary) and blend- however if you want to make more than one glass then follow this recipe.

A delicious vibrant milk which is far superior to cows milk in taste, nutrient content and nutrient availability.

Ingredients
  1. 1 1/2 Cups of Coconut water (about the contents of 1 coconut)
  2. 1 1/2 Cups of filtered Water
  3. 1 cup of coconut meat (normally 2-3 coconuts worth)
Instructions
  1. Add all the ingredients into a high speed blender
  2. Blend until thick and creamy.
  3. No need to strain
Notes
  1. This will keep in the fridge for at least a week but it is normally used up way before then.
  2. I have also made Coconut milk Kefir from this also. Just add the milk grains and leave with a muslin cover for 12-24 hours- to taste!
