Yep, you read right, make flourless brownies in your blender! So easy and quick! Throw all the ingredients and then pour the mix into your baking tray or molds like I do!
My kids love these and they also take them to school as their snack. I love them because they take literally minutes to make, there is minimal washing up, they have great nutrition in them and are sugar-free so continue to build their healthy relationship with food and real chocolate.
They are also great with a cup of tea for me!!
Blender Flourless Brownies
A simple, delicious and nutritious adjustment of a classic chocolate brownie recipe to make in the blender. Blitz, pour and bake. Sugarless too.
1 cup coconut oil (you could also use butter/ghee)
14 dates (more or less for you own sweet tooth)
1-2 tbsp. coconut sugar (optional)
3/4 cup cacao paste or 1/2 cup 70-80% chocolate bar/chips
3/4 cup water
1/2 cup collagen hydrolysate (optional)
pinch of vanilla or tsp vanilla extraxct
Chocolate chips for the top (optional)
Add all the ingredients
(yes it is that simple!)
Pour into greased baking tray or moulds
Bake for 20 mins at 180c (it may be longer if you are baking it in a baking tray)
allow to cool. They may feel fragile but when they cool they will firm up
These have a rich dark chocolate taste. My kids love them but if you are used to refined sugar brownies, these may taste bitter, adjust and reduce the amount of sugar each time you make them to change your palate. On the flip side if you are used to being sugar free, these may taste really sweet!

When I was 20 I went to the U.S.A to be a camp counsellor in New Haven, Connecticut. I absolutely loved it. I was there for almost 3 months, 8 weeks at camp and then almost 4 weeks traveling as south as South Carolina (I absolutely loved Charleston) and as north as Toronto. I was introduced to many new culinary species on that trip (man the American’s have rubbish cheese and chocolate- well they did in those days my blogger friends insist things have changed!) but the thing that stuck for me was waffles with maple syrup and bacon. Stuck-like-glue, I just love the salty sweet combination.
Over the years I always ordered it in a restaurant and make pancakes all the time but waffles always seemed like such a faff. NOT ANYMORE!
Blender waffles she says! My pancake making days were instantly changed when I found blender pancakes, the mix of healthy fats and protein in the eggs and almond/coconut flour, plus the natural sweetness of the banana has given my kids pancakes way more often- even on school days! Grain free too which make these perfect for me and my family. So I took this combo and played with the consistency and thus blender waffles are born!
I now make 2 different types; Chocolate Waffles (very rich chocolatey flavour with zero added sugar) and Vanilla Waffles. I have included both for you- you’re welcome!
Vanilla Blender Waffles
A gluten-free and super simple waffle recipe. All you need is a blender and 5 simple ingredients!

Chocolate Blender Waffles
Rich, bitter cacao with the natural sweetness of banana. Full of healthy fats and protein. Blender waffles are super simple and only have 7 ingredients that you probably have in your house. Grain free these are paleo friendly.
Using nuts as my granola has really helped to keep me full up for longer. Combined with coconut milk or coconut yoghurt (I also buy this one) I feel so satisfied and stronger. Fats are truly changing my body shape, energy levels and moods, I wish I had made the change sooner. I have not missed grains (although i would say I am 80-90% grain free nowaday)and have really been enjoying my food. I still eat legumes as I love lentils and beans. Alternating between grain-free granola, eggs for breakfast (see Greens, Eggs and Ham for my favourite recipe) and Blender Pancakes on the weekend we really do wake up hungry!
Using superfoods like orange powder and cacao paste can really help reduce the inflammation I have, healing the damage and boosting my metabolism. Chocolate and orange and nuts is also a match made in heaven. Since I am not cooking this granola I thought I would also mix it up by including a tablespoon of Walnut oil with the coconut oil/ghee. You could also use avocado oil if you like. The Sea Buckthorn oil also boosts the oil profile of this dish and ups the nutrient value even more.
I always try to pack in the nutrients especially when making food for the kids to eat. I love my vanilla butter fudge and my homemade chocolate so I thought I would combine the two to give a rich, dense softer fudgy consistency to my chocolate
