When I was 20 I went to the U.S.A to be a camp counsellor in New Haven, Connecticut. I absolutely loved it. I was there for almost 3 months, 8 weeks at camp and then almost 4 weeks traveling as south as South Carolina (I absolutely loved Charleston) and as north as Toronto. I was introduced to many new culinary species on that trip (man the American’s have rubbish cheese and chocolate- well they did in those days my blogger friends insist things have changed!) but the thing that stuck for me was waffles with maple syrup and bacon. Stuck-like-glue, I just love the salty sweet combination.

Over the years I always ordered it in a restaurant and make pancakes all the time but waffles always seemed like such a faff. NOT ANYMORE!

Blender waffles she says! My pancake making days were instantly changed when I found blender pancakes, the mix of healthy fats and protein in the eggs and almond/coconut flour, plus the natural sweetness of the banana has given my kids pancakes way more often- even on school days! Grain free too which make these perfect for me and my family. So I took this combo and played with the consistency and thus blender waffles are born!

I now make 2 different types; Chocolate Waffles (very rich chocolatey flavour with zero added sugar) and Vanilla Waffles. I have included both for you- you’re welcome!

Vanilla Blender Waffles
A gluten-free and super simple waffle recipe. All you need is a blender and 5 simple ingredients!

Ingredients
  1. 6 eggs (pasture raised if possible)
  2. 3 medium banana's
  3. 3 tbsp coconut flour
  4. 5 tbsp almond/oat flour
  5. 1 tbsp collagen hydrolysate
  6. 1/2 tsp Vanilla
  7. pinch of pink Himalayan salt
Instructions
  1. Add all of the ingredients to the blender and blitz on high until smooth. Pour into a heated waffle iron. Close waffle iron and cook for 4.5 minutes.
Notes
  1. I love to serve mine with bacon, maple syrup, almond butter and banana.

Chocolate Blender Waffles
Rich, bitter cacao with the natural sweetness of banana. Full of healthy fats and protein. Blender waffles are super simple and only have 7 ingredients that you probably have in your house. Grain free these are paleo friendly.

  5. 1 tbsp collagen hydrolysate

  7. dash of milk/water kefir
  8. pinch of pink Himalayan salt
Instructions
  1. Add all of the ingredients to the blender and blitz on high until smooth. Pour into heated waffle iron and cook for 4.5 minutes.

  1. I like to serve these black forrest style, with whipped cream or coconut cream and cherries or mixed berries.

As my daughter is back to school its all about snacks and lunches for me- coming up with ideas to keep her going and keeping her balanced is another full time job!!

So when I saw a pack of coconut macaroons in the health food shop I was interested in maybe seeing if she liked them- then I saw the price of them! I put them back and decided to make them myself.

I actually made these with my two year old son today they are that easy!!!

Coco Snackaroons
Yields 20
A delicious and nutritious snack for any age and any time of day! Made with real foods and a great amount of healthy fats.

Ingredients
  1. 2 cup shredded coconut
  2. 1 cup of dates
  3. 3 tbsp raw cacao
  4. pinch of salt
  5. vanilla essence
  6. 1tsp Coconut oil (optional)
  7. Optional extras;
  8. Ground almonds
  9. Chia seeds
  10. Sesame seeds/black sesame powder
Instructions
  1. Add all the ingredients to a food processor and blitz until sticky. Use the coconut oil if you need help binding everything together and to add nutrients.
  2. Ball mixture to the size you desire- for kids I do large marble size
  3. Store in the fridge

I have been loving my Mulbery and Goldenberry grain free granola. I wanted to branch out with a new flavour! Hence this amazingly delicious alternative! 

Using nuts as my granola has really helped to keep me full up for longer. Combined with coconut milk or coconut yoghurt (I also buy this one) I feel so satisfied and stronger. Fats are truly changing my body shape, energy levels and moods, I wish I had made the change sooner. I have not missed grains (although i would say I am 80-90% grain free nowaday)and have really been enjoying my food. I still eat legumes as I love lentils and beans. Alternating between grain-free granola, eggs for breakfast (see Greens, Eggs and Ham for my favourite recipe) and Blender Pancakes on the weekend we really do wake up hungry!

Using superfoods like orange powder and cacao paste can really help reduce the inflammation I have, healing the damage and boosting my metabolism. Chocolate and orange and nuts is also a match made in heaven. Since I am not cooking this granola I thought I would also mix it up by including a tablespoon of Walnut oil with the coconut oil/ghee. You could also use avocado oil if you like. The Sea Buckthorn oil also boosts the oil profile of this dish and ups the nutrient value even more.

The combination of chocolate and orange is a winner- add the nuts and you have a delicious healthy fat packed start to the day. Great for breakfast or as a snack.

Ingredients
  1. 1 cup raw almonds
  2. 1 cup raw cashews
  3. 1/2 cup pecans
  4. 1/2 cup macadamia
  5. 1/2 cup hazelnuts
  6. 1/4 cup sunflower seeds
  7. 1/4 cup pumpkin seeds
  8. 1/4 cup sesame seeds
  9. 50g cacao paste
  10. 2 tbs orange peel powder
  11. 1 tbsp walnut oil
  12. 1 tbsp coconut oil or outside of Hong Kong see here
  13. 1 tbsp maple syrup
Instructions
  1. Soak and dry your nuts
  2. Add all the dry ingredients into a food processor.
  3. Blitz until crumble like
  4. Add oils and maple syrup and mix well till covered
  5. Dehydrate on silicon sheets or bake in a cool oven.
  6. Store in a air tight container in the fridge
  7. Serve with almond milk or coconut yoghurt

Orange Peel Powder

Orange Peel Powder

I love keeping orange, mandarin and tangerine peels. I dry them in the dehydrator and I blitz them in my blender to powder. As a natural Vitamin C supplement the peel has numerous benefits. Organic oranges are ideal as oranges do get sprayed and retain a high amount of pesticides. However Organic oranges are hard to come by in Hong Kong so I first soak my peels in a kombucha and water solution to help remove the waxes and chemical residues. 

The Limonene and flavonoids found in orange peel (also grapefruit, lemons and limes) have been seen to have some anti-carcinogenic properties. Especially in Breast and colon cancer cases. The limonene oils may inhibit cancer cell growth. Studies have shown that limonin and limonene can start the enzyme activity  an important detoxifying enzyme called of glutathione S-transferase. This helps as an antioxidant and anti-inflammatory which blocks the need of the cell to mutate to protect itself. The citric acid in the peel also plays a key role in this.

Orange peels are a natural source of pectin, a natural fiber which may decrease the rise in blood sugar after a meal. Thus being of some benefit to pre and type 2 diabetes. Pectin is also a pre-biotic- helpfully feeding and balancing our bacteria friends so necessary to the body (see Culture Your Life which is all about the benefits of bacteria).

This gives orange peel has antiseptic, bactericidal, and fungicidal properties by helping out the bacterial environment. D-limonene may also be helpful in dissolving kidney stones and  beneficial in eliminating any kidney or urinary tract infections. Especially when the peels have been slightly fermented by the Kombucha in the soaking process. The Kombucha not only removes the chemical residues it may also begin the digestive process by increasing the bioavailability of the nutrients in the peel.

The natural properties in orange peel have also been seen to helpful in lowering cholesterol.

“In a May 2004 “Journal of Agricultural and Food Chemistry” article, Canadian researchers and the United States Department of Agriculture reported that isolated compounds from orange and tangerine peels showed promise as a natural alternative for reducing LDL cholesterol without the side effects of mainstream cholesterol drugs.” (source)

They may also help with heartburn. According to a 2007 Alternative Medicine Review article by Jidong Sun, Ph.D., Sun notes that an active ingredient found in the orange peel, d-limonene, possesses the ability to neutralize gastric acid and support normal peristalsis. (source)

 This great powder is so easy to make and I add it to so many things!

Orange peel powder can be added to;

Homemade chocolate (and hot chocolate or chocolate milkshakes)

Homemade fudge

Drinks (it is nice in fizzy water but also in Gin and Tonic!)

Baked Goods like Shortbread, Coconut Cookies, Carrot Cake

Salad Dressings

Jams and Spreads (especially chocolate spreads)

Sprinkled on ice-cream

Homemade Cosmetics (like scrubs and body butters)

Granola, MuesliChia porridge or Bircher Chia

Kefir,

Kombucha

Teas and coffee

Stock

Smoothies 

Homemade Cleaners

Orange Peel Powder
A great way to get some vitamin c into your diet. Also a great anti-oxidant and anti-inflammatory ingredient that can be added to homemade cosmetics, chocolate, drinks, baked goods, muesli, teas, kefir and kombucha. The possibilities are endless!

Ingredients
  1. Orange peel
  2. Kombucha/apple cider vinegar
  3. water
Instructions
  1. Soak your orange, mandarin, tangerine or other citrus peel in a solution of water and Kombucha (use about 1 tbs kt to 500mls water)
  2. Use a dehydrator (at 100F) or oven at the lowest setting and dry your peel until it is hard and completely dry.
  3. When your peel is completely dry put in a high speed blender and blitz until powder.
  4. Add to fizzy water and drink otherwise it can be added to; chocolate, drinks, baked good, use it to flavour Kefir, kombucha or add it to teas, stocks and smoothies! Why not use in your homemade cosmetics!
Notes
  1. so easy- give it a go- you were only going to throw the peel away anyway!
  2. Another good way to use the peel is to add it to bath water

I always try to pack in the nutrients especially when making food for the kids to eat. I love my vanilla butter fudge and my homemade chocolate so I thought I would combine the two to give a rich, dense softer fudgy consistency to my chocolate

It is so yummy!

Chocolate Fudge
A rich, dark chocolaty fudge that is junk free and packed with essential fats and nutrients. Great for all ages and sweetend with coconut sugar

Ingredients
  1. 1/2 cup cocoa butter
  2. 1/4 cup coconut oil
  3. 1/4 cup ghee
  4. 1 cup raw cacao
  5. Coconut Icing sugarto sweeten to taste
  6. Hazelnut and Vanilla Essence (optional)
Instructions
  1. For a smooth texture and for all the fats to emulsify throw all the ingredients into your blender or food processor and blend until smooth. You can also stir this up in a measuring cup
  2. Pour into molds or onto baking paper on a baking sheet.
  3. Freeze or refrigerate until set.
